Delicious bircher muesli – by Amy McKendrick

This fabulous Bircher recipe has been designed by our fantastic nutritionist partner Amy McKendrick @mynutirioncoach. A healthy, delicious, energy packed and nutritious way to start your spring day, yum.

Once you purchase the below dry store ingredients, this recipe will be easy to throw together with most things you should then have in the house, enjoy!

Ingredients (serves 2)

1 tablespoon ground flaxseed

2 teaspoons chia seeds

1 teaspoon sesame seeds

1 tablespoon pumpkin seeds

1 tablespoon sunflower seeds

3 tablespoons rolled oats (or 2 tablespoons quinoa flakes and 1 tablespoon buckwheat if wanting gluten free option)

2 teaspoons organic sultanas

1 tablespoon shredded coconut

1 tablespoon slivered almonds

1 orange (juiced or squeezed)

200ml almond milk

1 grated red apple

2 tablespoons natural organic yoghurt (optional)

Method

Soak the flaxseed, chia seed, sesame seed, pumpkin seed, organic sultanas, sunflower seeds, coconut, almonds and oats in the almond milk and orange juice overnight in the fridge.

The next day mix through the grated apple and fresh seasonal fruit. Fold through the yoghurt if using and it’s ready to go.
